Should Hilary’s Special
Honey be refrigerated?
No. Both before and after
opening, honey should be kept at room temperature, preferably in a dark
cupboard. Anything we add to our flavoured honey is stable at room
temperature.
However, leave your honey in the car
during warm weather. Hilary’s Honey will liquefy in a warm car
very rapidly. Leaving it in the car during freezing weather is not
a good choice either.

Is Hilary’s Special Honey pasteurized?
We began using
unpasteurized Ontario honey in September 2003.

Is there
any sugar or colour added to Hilary’s Special Honey?
Some of our flavours
do have added sugar and/or colouring. They are: Apple Harvest, Blueberry
Blast, Orange Grove, Pineapple Delight, Raspberry Bush and Strawberry
Field. All other flavours contain NO added sugar or colour.

When I opened my jar of Hilary’s Special Honey, there was froth on the top.
What is it?
When we blend our honey with a variety
of dried fruit, spices and flavouring, air is added as well – just because of
the mechanical process. As the honey sits, air bubbles often rise to the
top, forming a light froth. Just give the honey a good stir and blend the
air bubbles back into the honey. Or, if you prefer, you can scrape the
froth away and dispose of it.

Why is Hilary’s
Special Honey so thick and stiff?
We make Hilary’s
Honey with creamed honey which is naturally stiff. If you’d like your honey
to be easier to spread, just gently warm it first in the microwave or some hot
water. Do not over heat.

Can I cook with Hilary’s
Special Honey?
Of course. We do –
all the time. Ginger Storm, Cinnamon Stick, Hot Pepper Alarm and
Sweet Garlic Clove are favourites for cooking. But try the fruit flavours
on seafood and meat; one of our favourites is Cranberry Marsh on baked
salmon. If you come up with
a great recipe, let us know.

or glaze.

Is honey kosher?
According to our research ... it depends.
Pure
honey is considered naturally kosher. Some of our honey flavours
have artificial ingredients added;
they might not be considered kosher. However, our
savoury flavours
have only pure spices, herbs and dried vegetables added -- nothing artificial.
Nevertheless, please use your own judgment in this matter. Hilary's
Special Honey has not sought kosher certification.
